Lately I have been cooking a lot with mushrooms and I wanted to share this very simple weight loss salad with mushrooms. I make this for breakfast or dinner.
Since I have been trying to eat less meat, a mushroom salad is an easy choice. Mushrooms are just as filling as the meat while having few calories. They are the only vegetable rich in vitamin D. Since it takes a while to clean and cook the mushrooms for this weight loss salad with mushrooms and mustard, sometimes I make a bigger batch. Then I store it in the fridge and consume in the next day or two. They are easy to add on top of any salad or just have as a side dish.

Weight Loss Salad With Mushrooms
125 gr mushrooms
1 smaller head of green salad
1 tbsp mustard
Apple cider vinegar
- Brush or wash the mushrooms. Cut each into slices. Place them into a bigger skillet with some water. Bring the heat to medium-high and cook until all the liquid evaporates. Stir occasionally.
- In the meantime, wash and cut salad and the cucumber into bite size chunks. Season with salt, vinegar and olive oil. Place it on to a plate.
- Wash then cut tomato into chunks, season with salt, vinegar and olive oil and place in a serving bowl.
- When all of the water has evaporated, season the mushrooms with some salt, stir then scatter over the salad.
- Enjoy warm or cold!
