Here is another very simple and very delicious recipe for weight loss or just healthy recipe in general. That is the main goal with my weight loss journey – to eat healthy. And this time it’s a zucchini soup. I like to have it as a light dinner but you can have it as a starter for lunch too.
For this easiest soup recipe I like to use whole zucchini, with the skin on. There are a lot of nutrients in the skin and it adds deeper color too. Just make sure to wash it well.
As this zucchini soup for weight loss is very basic, you can play around with spices. I like to keep it basic and so I use only salt, dill and parsley. But a bit of chili would go nice too!
But trust me, the simplicity of this weight loss zucchini soup will impress you! It is so full of flavor and silky – just irresistible!
Most of the time I will have this weight loss soup recipe just as is. You can top it with some kefir or serve with a simple salad on a side.

1 tbsp dill
1 tbsp kefir
- Wash and cut the zucchini into thicker slices. Place in a smaller pot and cover with water.
- Place on medium-high heat and bring to boil. Then reduce the heat to simmering point and cook until the zucchini is cooked through and soft. Remove from the heat.
- Add in salt and dill. Using a hand mixer, blend until smooth.
- Serve warm with some kefir drizzled on top. Enjoy!
