Zucchini Muffins With Whole Grain Flour

A little while ago I posted a picture of my zucchini muffins with whole grain flour on my Instagram. And quite a few of you asked for the recipe! So, I am happy to share it with you today!

I was looking for a new breakfast recipe, something a little different than my usual eggs, tuna, porridge… and my sister recommended these zucchini muffins. And they are amazing!

There are a couple of things to have in mind when making these zucchini muffins recipe healthy!

First, make sure to squeeze out as much juice as possible out of the grated zucchini. Some have more juice, some have none. You can leave the grated zucchini to sit for around 30 minutes or help speed up the process and squeeze the juice out, using your hands or a spoon.

Second, the amount of flour you are going to need for these easy vegetable muffins, depends on the size of the zucchini you are using. For the texture you should be looking for, check the video in the end of this post!

Third, you can use regular flour for these weight loss zucchini muffins as well. But whole grain flour is a healthier option (richer in minerals and vitamins). But also it looks nicer and it gives more flavor to the muffins.

These courgette muffins or zucchini muffins with whole grain flour are best served with cucumber salad and some tea. The combination is out of this world good!

Zucchini Muffins With Whole Grain Flour

Ingredients

  • 1 zucchini

  • 200-300 gr whole grain flour

  • 1 egg

  • ½ tsp baking powder

  • ½ tsp baking soda

  • Salt

  • 8 cupcake cases

Process

  • Wash then grate the zucchini. Place in the sifter and lightly salt. Then leave for around 30 minutes or until it releases the liquid. You can also help speed up the process by squeezing out the juice.
  • Transfer drained zucchini into a bowl. Add in lightly beaten egg, flour, salt, baking powder and baking soda. Then using a spoon, mix until combined.
  • Divide the mixture between the cupcake cases. Place the muffins into the preheated oven at 180 °C. Bake for around 20-30 minutes or until toothpick inserted comes out clean and they are golden brown on top.
  • Serve with cucumber salad and some tea. And enjoy!
