For this easy sandwich for weight loss I used my easy bread for weight loss I posted a couple of videos ago. It just goes well with this sandwich combination! It takes less than five minutes to put together and it lasts for more than a week in the refrigerator.
For this mushroom recipe for weight loss I used simple button mushrooms. But even brown or chanterelle mushrooms will work fine.
Then to add some greens and for more flavor for this mushroom sandwich with tomatoes, I like to use peppery arugula for this combination. It goes well with meaty mushrooms and sweet tomatoes.
To go along with this mushroom sandwich vegan I like to serve simple cucumber salad. And I like to add a lot of apple cider vinegar!

4-6 medium size mushrooms
Handful of arugula
4 cherry tomatoes
2 pieces of bread
- Cut the mushrooms into smaller pieces. Add to a pan on medium-high heat. When the mushrooms release the liquid, turn heat to high and cook until all the water evaporates.
- Place two pieces of bread on a plate. Cover each with some arugula. Top with mushrooms and chopped cherry tomatoes. Season with salt and olive oil.
- Serve right away and enjoy!
