This has been my favorite snack this week! And that is because, this healthy dessert salad is juicy, refreshing, lite and a little sweet.

I also think of this apple salad as a dessert. And this is probably because of apples and prunes. 😊

For this apple and walnut salad I like to use Granny Smith apples. They have a lot of juice, are crisp and I like the sour taste too. It’s a great contrast to the sweet prunes and carrots.

Most color in this beet salad recipe comes from beets. And it’s a beautiful color, don’t you agree?!

This easy carrot salad is best served right away. I also like to sprinkle some more ground walnuts on top.

This recipes makes enough of this apple salad recipe for two. So, it’s perfect for sharing. But, if you are very hungry between meals, just have the whole thing!

You can also add some cinnamon to this carrot salad. Cinnamon helps you burn fat so a teaspoon here and there is always a plus!

Ingredients

  • 1 Granny Smith apple

  • 1 carrot

  • 1 beet

  • 1 tbsp ground walnuts

  • 1,5 tbsp apple cider vinegar

  • 3 prunes

Process

  • Grate apple, carrot and beet. Wash then cut prunes into chunks.
  • Place all the ingredients into a bowl and mix well.
  • Serve right away and enjoy!
