½ head of green salad
1 smaller chicken breast
2 tbsp mustard
2 tbsp olive oil
2 tbsp apple cider vinegar
- Place chicken into a small pot filled with water. Bring to boil, then reduce the heat to simmering point and cook until chicken is cooked through. Discard the water. Cut chicken into bite size chunks.
- Wash and cut salad and tomato into chunks.
- In a small bowl mix mustard, oil, vinegar and salt until combined.
- In a big bowl add salad, tomato, chicken. Pour over the dressing and mix until everything is well coated with the dressing.
