This fruit salad with beets is so refreshing and really a perfect snack! There is more vegetables than fruit in it but it is still sweet and just enough.

For this fruit salad with a twist I used one small raw beet. Who would have though raw beets taste so good?! It definitely surprised me. Have you tried eating raw beets and how did you like it?
When I started my weight loss journey I posted a similar salad to this healthy weight loss snack salad. You can find that one here. First one is more indulging and this one is more on a simple side. You can also turn both of these into a drink. You can use blender or a juicer for it.
Instead of apple cider vinegar you can use lemon for this healthy weight loss snack fruit salad. Vinegar is more convenient and so I like to use if more often.
Another thing I really enjoy about this refreshing beat fruit salad is how vibrant and colorful it is.

Process
- Peel the vegetables and fruit. Grate and then combine with with vinegar. Serve right away!
