Healthy Caprese Sandwich

Since I planted my basil plant a couple of week ago this healthy caprese sandwich has been my go-to breakfast! Basil looks very elegant, it has a delicate smell and taste but it manages to add irreplaceable touch to any dish.

I used a whole wheat bread for this tomato weight loss sandwich. This one is store bought but I plan on sharing a recipe which I am currently experimenting with.

Also, toasting the bread for this caprese sandwich for weight loss is optional. I think that toasting the bread brings out more flavor and I like the texture more too.

Traditional caprese sandwich, not a healthy caprese sandwich :), calls for mozzarella. To make this a low-fat weight loss sandwich I used low-fat cottage cheese. And it tastes delicious! But any low-fat cheese will do.

I don’t think these is a low-fat mozzarella to make this cheese weight loss sandwich. But if there is let me know! That would be a dream!

Healthy Caprese Sandwich

Ingredients

  • 2 pieces of bread

  • 1 tomato

  • 2 tbsp cottage cheese

  • Salt

  • Fresh basil leaves

  • 1 tbsp olive oil

  • Salad to serve with

Process

  • Toast the bread pieces. Wash then cut tomato into slices.
  • Place toasted bread pieces on to a plate. Cover each piece with tomato slices. Top each slice with a spoonful of cottage cheese. Decorate with basil leaves. Season with salt and drizzle over with some olive oil.
  • Enjoy with lots of salad!
