As we are in the colder period of the year, this healthy polenta recipe will be my breakfast of choice a lot. And I think you should try it too! It is just so simple, easy and satisfying.
Out of all the meals breakfast is the one I experiment the least with. I have a few staples I really enjoy and can’t get enough of. This weight loss breakfast ideas or my thick polenta is one of them.
For this polenta with cottage cheese, I use the kind that cooks fast. It takes just around 5 minutes. In the video I made it using wooden spoon. But it’s much easier and 100% guarantied there will be no lumps if you use a hand whisk.

Also, I made this breakfast polenta recipe on a thicker side. If you prefer it looser, then just use more water from the start.

50 gr of polenta flour
100-200 ml water
1 tbsp cottage cheese
- Place water and salt in a small pot. Bring to boil.
- Reduce the heat to medium. Add in polenta in slow stream while mixing with hand whisk at the same time. Continue cooking and mixing constantly until the polenta is cooked through. Cooking times can be different so check what it says on the packaging.
- Serve warm topped with the cottage cheese.
