These are addictive, ok?! 😀 I love ice cream and like to enjoy it all year around. And I prefer gelato because of its creamy, heavy consistency in comparison to regular ice cream which has more watery, icy and light consistency.

These three are so rich and creamy! If you serve them right away, they have consistency between soft serve and gelato. If you freeze peanut butter and raspberry one, they have the consistency of gelato and the chocolate one has more icy consistency.
I love the fact that they are healthy, using three ingredients and so quick to make!

To serve I like to play with the toppings. This extra step makes them look even more yummy and irresistible! For the chocolate one I could decide if I liked better caco or melted chocolate as topping so I included both. Melted chocolate starts to harden pretty fast and it gives interesting texture. It also gives extra richness to the ice cream.

For this recipe I used food processor for the first time. I finally decided to buy one after I was thinking about it for years! I don´t like to have appliances and stuff in general that I don´t use friequently and so it took me some time to make the decission. I have used it almost daily since so I am very happy it!
Healthy ice cream – 3 ingredients, 3 ways, no ice cream machine

Peanut butter ice cream1 tbsp peanut butter (I am using smooth kind)
3 frozen bananas
0,6 dl plant milk (I am using oat milk)
- Raspberry ice cream
3 dl frozen raspberries
2 frozen bananas
0,6 dl plant milk (I am using oat milk)
- Chocolate ice cream
2 tbsp cacao powder
3 frozen bananas
0,8 dl plant milk (I am using oat milk)
- Toppings
2 tbsp chopped salted peanuts
2 tbsp honey
2 handfuls frozen raspberries + 1 hanful broken ones
1 tbsp honey
60 gr dark chocolate
2 tsp cacao powder
Process
- For each flavour, place all three ingredients to a food processor and blend until smooth. Don´t be tempted to add liquid or more liquid. Just let the processor do it´s work. This way ice cream will end up thick and creamy.
- Top peanut butter one with chopped salted peanuts and more honey.
- For raspberry syrup, place 2 handfuls whole frozen raspberries to a small pot, add honey and bring to boil. Crush raspberries with the back of a spoon. Put mixture through a sifter. Transfer the juice back to the pot and simmer until it thickens slightly. Leave to cool then drizzle over the raspberry ice cream.
- Top chocolate ice cream with melted dark chocolate or some cacao powder.
- Enjoy!
