Crunchy, juicy and colorful – that is my idea of a really good KFC burger! And this one is healthy and easy to make too!

For the wet coating for this kfc style burger recipe, instead of the yogurt you can use buttermilk or kefir.

The actual burger, for this healthy kfc burger, is very crunchy. For the coating I am using cornflakes which I like to lightly crush. I do this with my hand but you can do in the food processor too.  

To go on top of with the bright burger part, for this burger kfc style recipe, I like to serve healthy coleslaw. To make it even healthier, you can skip adding the mayo.

This coleslaw salad will keep in the fridge for two to three days.

To go along with this chicken burger kfc style, I like to serve very simple potato wedges, ketchup and of course pickles!

This burger kfc style is very light in taste so it wont leave you feeling heavy afterwards.

Ingredients

  • For the burger
  • 300 gr cornflakes

  • 1 chicken breast

  • 2 dl yogurt

  • 2 tsp mustard

  • 2 tsp ground paprika

  • 1 tsp black pepper

  • 2 tsp salt

  • 2 hanburger buns

  • Pickles

  • Ketchup

  • 4 medium size potatoes

  • 3 tbsp oil

  • For the coleslaw
  • ¼ red cabbage

  • 1 carrot

  • 2 tbsp crème fraiche

  • 2 tsp mayonnaise

  • 2 tbsp apple cider vinegar

  • Salt&pepper

Process

  • For the coleslaw
  • Grate red cabbage and carrot not too finely.
  • Place grated cabbage and carrot in a bowl. Add in crème fraiche, mayonnaise, vinegar, salt and pepper to taste. Mix well, cover the bowl and leave in the refrigerator.
  • For the burger
  • In a small bowl place yogurt and mustard and mix well.
  • Cut potatoes into bigger wedges. Place the wedges in a baking tray, season with salt and drizzle over with oil. Mix with your hands, then spread them with space between each.
  • Place the potatoes in the preheated oven at 200 °C and bake for around 30 minutes.
  • In a medium size bowl place corn flakes and crush lightly with your hands.
  • Add in ground paprika, salt and pepper and mix with a spoon.
  • Cut chicken breast into half. Place one half in a plastic bag and using something heavy – pan, rolling pin.. beath until the meat is thinner and as equally thick as possible.
  • Dry each chicken half using a piece of kitchen towel.
  • Dip each chicken half in the yogurt mixture then transfer to the cornflakes mixture. Tap cornflakes mixture all over the chicken and cover it well.
  • Place the chicken pieces on a baking rack on top of the baking tray. Place in the preheated oven at 200 °C and bake for 10 minutes. After 10 minutes, turn the burgers on to the other side. Bake for 10 more minutes.
  • To serve, place lower half of the burger bun on to a plate. Top with the healthy kfc burger, place about 2 tablespoons of the coleslaw on top of the burger and cover with the top bun part.
  • Place a handful of the potato wedges on a side along with some ketchup and a few pickles.
