There are some delicious and decadent brownies on my blog and youtube but I think that these brownies with caramel and pretzels take the prize!

These are the MOST decadent brownies with pretzels and are completely irresistible! And SO cute!

For the caramel topping for these caramel pretzel brownies you can choose how dark of a caramel you want. I chose pretty light version. If you want darker caramel and with deeper flavor just cook the caramel for longer.

And for the salt for these salted caramel brownies with pretzels you can use regular salt too. But coarse sea salt look almost like sparkly diamonds and is perfect for the festive occasions!

I call this one also easy holiday desserts with cream. There are a few steps to this brownie, but they are easy and everything gets done pretty fast, at least in my opinion.

You can serve these easy new years desserts with cream in bigger, regular size brownie pieces. But I think that cutting them into these smaller pretzel size pieces is so cute. And it makes for perfect bite size brownies!

And the brownies will stay as fudgy even the next day. Just take these easy festive desserts with cream out of the fridge for at least 1 hour before cutting.

Brownies With Caramel And Pretzels

Ingredients

  • For the pretzel bottom part
  • 125 gr pretzels

  • 75 gr butter

  • 2 tbsp caster sugar

  • For the brownies
  • 370 gr dark chocolate

  • 175 gr butter

  • 5 eggs

  • 370 gr brown sugar

  • 1 tsp vanilla

  • 1 tsp salt

  • 90 gr flour

  • For the salted caramel topping
  • 150 gr caster sugar

  • 130 gr heavy cream

  • 100 gr honey

  • 2 tsp coarse sea salt + more for topping

  • 2 handfuls pretzels for topping

Process

  • For the pretzel bottom
  • Melt butter.
  • In a food processor place pretzels, melted butter and sugar. Mix until you have some smaller and some bigger chunks.
  • Place in a baking dish (20x30cm) lined with baking paper.
  • Bake in the preheated oven at 180 °C for 6 minutes. Then take out of the oven and leave on a side.
  • For the brownies
  • In a double boiler, melt chocolate and butter until smooth. Leave to cool for a bit.
  • In a big bowl add eggs, sugar, vanilla and salt and mix until pale and fluffy.
  • Add in chocolate and butter mixture in slow stream and mix at the same time.
  • Sift in flour in three stages and mix briefly in between.
  • Pour the brownie mixture over the pretzel bottom.
  • Bake in the preheated oven at 180 °C for 30-35 minutes or until toothpick inserted comes out wet.
  • For the salted caramel topping
  • Place all the ingredients in a small sauce pan.
  • Turn the heat on and bring to boil. Continue cooking and stirring occasionally until it reaches 120°C.
  • Remove from the heat and pour directly over the brownies.
  • Sprinkle over some more sea salt.
  • Leave the brownies to cool on a kitchen counter for a bit then place in the fridge so that they cool completely.
  • Take the brownies out of the fridge at least 1 hour before serving. This way brownies and caramel can come to room temperature and are easier to cut.
  • Place a few pretzels on top of the caramel and use them as a guideline to cut small bite size chunks.
