One Pan Baked Vegetables With Cheese

I was contemplating if I should post this one pan baked vegetables with cheese, because it is very basic. But because I make it often, my husband loves it, it made sense to share!

This baked vegetables with feta cheese is the easiest recipe to make and you get so much flavor for very little effort!

Combination of baked vegetables with cheese – potatoes soft on the inside with crunchy edges, sweet potatoes, almost caramelized peppers, carrots which have more bite to them with the salty feta is just so satisfying!

I tried this sheet pan vegetable dinner with feta, with many different vegetables like asparagus, broccoli, cauliflower and beets. That way it taste a little different every time, so you don’t get bored of the dish.

 

Just make sure to cut potatoes into smaller bite size chunks, for this one pan roasted veggies and creamy feta. Potatoes usually take longest to bake and you want everything to be done at the same time.

I love using feta in simple recipes like this sheet-pan baked feta with sweet potato and peppers. Feta gives so much character! And it ends up being creamy with the chewy edges. So good!

 

You can serve this one pan sweet potato with cheese as is. I like to serve mixed greens salad and some lemon wedges to go with this.

You can also serve this  one pan baked vegetables with cheese as a side dish with cooked or fried meat, mushrooms or tofu.

One Pan Baked Vegetables With Cheese

Ingredients

  • 5 medium potatoes

  • 1 sweet potato

  • ½ red pepper

  • ½ yellow pepper

  • 1 red onion

  • 3 carrots

  • 1 tsp ground coriander

  • 1 tsp ground paprika

  • ½ tsp chili

  • 1 tsp dried oregano

  • Salt & pepper

  • Oil

  • 100 gr feta cheese

Process

  • Wash and peel vegetables. Cut potatoes into smaller chunks. Cut peppers into 2 cm chunks, carrots into thicker slices, onion into bigger chunks.
  • Place all the vegetables in an 20×30 cm oven form. Add in spices, oil and mix until combined.
  • Bake in the preheated oven at 180°C for around 30 minutes. Then crumble over feta cheese and continue baking until vegetables are cooked though and feta cheese has developed some color and edges are brown and chewy.
  • Serve warm, as is or with some salad and lemon juice.
