No Bake Chocolate Nutella And Ricotta  Cheesecake – sounds devilishly good right?! I would go as far as calling it Best no bake Nutella cheesecake recipe!

This chocolate Nutella cheesecake recipe is just perfect! With buttery and crumbly base, smooth layer of Nutella, cheesy filling with chunks of chocolate and biscuits, topped with more biscuits and slag. It is just irresistible!

Finding simple cacao cookies turned out to be impossible were I live. So, I ended up buying chocolate cookies with filling. Then I had to remove the filling before processing the cookies. I was really determined to make this chocolate cheesecake recipe! 😀

In Sweden, chocolate chips are not very common either, so I used roughly chopped dark chocolate instead for this no bake Nutella cheesecake recipe.

To decorate this Nutella cheesecake recipe no bake I used Serbian slag. Slag doesn´t leave the fatty taste in your mouth which is why I like using it. Here you can read about how easy it is to make and where to buy it. But you can also use whipping cream if you prefer.

Ingredients

  • 100 gr cacao biscuits

  • 40 gr melted butter

  • 2 heaping tsp Nutella

  • 80 gr ricotta cheese

  • 80 gr mascarpone cheese

  • 40 gr powdered sugar

  • 15 gr cacao biscuit chunks + more for decorating

  • 50 gr chopped dark chocolate

  • 1 packet of slag (or 100 gr whipping cream)

  • 100 ml milk or water

  • 1 tbsp powdered sugar

Process

  • Place biscuits in a food processor and mix until fine powder.
  • In a bowl, combine biscuit powder with melted butter. Transfer to 12 cm round form lined with baking paper. Press down the base with your fingers, back of a spoon or bottom of a glass. Leave in the fridge for 30 minutes.
  • In the meantime prepare the filling. In a bowl mix both kinds of cheese and powdered sugar until smooth. Add chunks of chocolate and biscuits.
  • After 30 minutes, take the cake base out of the fridge. Spread over a layer of Nutella. Add all of the filling on top. Then leave in the fridge again, for at least 3 hours.
  • In the meantime prepare the toppings. Crush biscuits into smaller chunks.If using slag, place powder, milk or water and powdered sugar in a medium size bowl. Mix for 5 minutes until light and fluffy.
  • When the cake has had time to set, take it out of the fridge. Remove the cake tin sides and the baking paper.
  • Decorate with slag or whipping cream. Add biscuit chunks in the middle.
  • Cut into slices and enjoy!
