Here is another very autumnal recipe. This time for Salted caramel and pecan blondies. This is classic and delicious combo!
You can use store bought caramel sauce for these salted caramel pecan blondies. Just make sure to buy thick kind. But making your own is very easy, you can control how deep the flavour will be and you can use left overs for many other desserts.

I like to cook sugar and water until it reaches deep amber color. This means that the taste of caramel will be stronger. And this way salted caramel blondies will have rich caramel flavour too.
These salted caramel pecan blondies easy are a little different from the other two blondies I posted. Texture for these is more cake like which makes it perfect for the sauce to get absorbed into.
Before baking these salted caramel pecan blondie recipe, you can scatter chopped pecans on top of the sauce. I prefer to serve them on top of each slice with more caramel sauce.
If you don’t have pecans for these pecan caramel blondies, walnuts will work well too!

Salted caramel and pecan blondies

115 gr soft butter
120 gr brown sugar
1 egg
2 tsp vanilla
Pinch of salt
130 gr flour
40 gr salted caramel sauce
Pecans for serving + more of the caramel sauce
- For the caramel sauce
250 ml heavy cream
1 tsp vanilla
220 gr sugar
120 ml water
Pinch of salt
Process
- For the caramel sauce
- In a small sauce pan, add sugar and cover it with water. Turn the heat to medium and bring to boil. Boil until it reaches amber color. Take the pan off the heat, add a few tablespoons of cream and mix using wooden spoon. When the bubbles subside add the rest of the cream. Mix in the vanilla and salt. Transfer to a bowl and leave until it reaches room temperature. Then, you can place it in a fridge. It will thicken as it cools.
- For the blondies
- In a medium size bowl add soft butter and sugar. Cream together, using a wooden spoon.
- Once mixture is pale add egg, vanilla, flour and salt. Mix just until you no longer can see any raw flour.
- Transfer to a 20×20 cm baking dish lined with baking paper.
- Drizzle over some of the caramel sauce and using a toothpick, swirl it in to the batter.
- Bake in the preheated oven at 180 °C for 25 minutes or until toothpick inserted comes out clean.
- Serve warm or cold. With some chopped pecans and more of the caramel sauce on top.
