4 pieces of bread
Oil, enough to cover bottom of a pan
2 tbsp peanut butter
2 handfuls fruit – berries, nectarines, bananas
2 tbsp maple syrup
Pinch of powdered sugar
- In a wide plate add eggs and beat until frothy.
- Add oil to a large pan and heat up to medium-high.
- Dip each piece of bread into the eggs. Transfer directly to the pan. Cook until golden brown on both sides. This takes about a minute per side.
- To serve place French toast pieces onto each other. Drizzle over with peanut butter. Add the fruit, drizzle maple syrup and dust with some powdered sugar.
