You can add a layer of peanut butter and sliced fruit between each piece of toast, for this stuffed french toast recipe. That would actually make for a beautiful presentation!

I like to use juicy fruit for this peanut butter toast. Berries, nectarines or stewed apples work best. You can even use frozen berries, as is or just heat them up in a small pot until they release their juices. Then just pour over the toasts!

And of course, serve this peanut butter toast recipe with some maple syrup for the ultimate experience!

Peanut Butter Stuffed French Toast

Ingredients

  • 4 pieces of bread

  • 2 eggs

  • Oil, enough to cover bottom of a pan

  • 2 tbsp peanut butter

  • 2 handfuls fruit – berries, nectarines, bananas

  • 2 tbsp maple syrup

  • Pinch of powdered sugar

Process

  • In a wide plate add eggs and beat until frothy.
  • Add oil to a large pan and heat up to medium-high.
  • Dip each piece of bread into the eggs. Transfer directly to the pan. Cook until golden brown on both sides. This takes about a minute per side.
  • To serve place French toast pieces onto each other. Drizzle over with peanut butter. Add the fruit, drizzle maple syrup and dust with some powdered sugar.
  • Enjoy while warm!
