When it comes to sausages, I really like Italian sausages with fennel. They are very aromatic and easy to pair with different ingredients.

Like this Italian sausage pasta. This is Italian sausage pasta skillet but you can make it in a Dutch oven type of dish too.

This Italian sausage pasta recipe easy is as the name suggests, very easy and quick to make. And makes for great leftovers too! This is the type of dish I like to make for a few days ahead.

I am using Italian fennel sausage for this Italian fennel sausage pasta recipe but you can use any sausage you like. Even chorizo would go well.

I don´t cook often with red meat/sausage so, this Italian pasta with sausage is one of the few recipes I make using those ingredients.

I like to serve this pasta with simple tomato and cucumber salad. This Italian sausage pasta with cream sauce is very creamy so it goes well with fresh, crunchy veggies.

As there is cream in this Italian sausage pasta with cream it is not the healthiest of recipes but it is very comforting for sure!

For this Italian sausage and tomato pasta or Italian sausage pasta with cherry tomatoes I used cherry tomatoes. They are there just for some additional colour and to add some lightness to the dish.

Ingredients

  • 500 gr trottole pasta

  • 400 gr Italian fennel sausages

  • 1 yellow onion

  • 2 carrots

  • 3 celeri stalks

  • 3garlic finely chopped

  • 400 gr whole cherry tomatoes from can

  • 300 gr crushed tomatoes from can

  • 330 gr cream for savory dishes

  • Salt

  • 1 tbsp fresh chopped basil

  • Pepper flakes to taste

  • 2 tbsp oil

  • 400 gr cherry tomatoes

  • 1 cucumber

Process

  • Fill large pot with water and bring to boil. Chop onion, garlic finely, carrots and celery into smaller chunks. Cut fresh tomatoes and cucumber into smaller chunks and combine in a bowl. Leave in fridge until it is time to serve.
  • Add oil to a large pan with high sides. Heat up to medium-high then add onion, garlic, carrots, celery and sausage. Cook until vegetables soften, garlic becomes fragrant and meat is no longer pink. Add chili to taste.
  • Add tomatoes, cream, basil, parmesan and salt. Bring to boil then turn heat down to simmering point and cook for 8-10 minutes or until the sauce thickens slightly and meat is cooked through.
  • In the meantime add pasta to boiling water and cook until al dente. Drain and add to the sauce. Mix to combine and serve warm with salad.
