When I don’t have a lot of time this lentil and pasta dish is usually what I like to make. It doesn’t need a lot of preparation and it is done in under 30min. I like it just as is but it also goes well with a simple salad, pan fried meat or some yogurt!

Red lentils with pasta

1 tbsp coconut oil
1 yellow onion
2-3 garlic cloves
1 chili pepper or some ground chili
4 tbsp tomato pure
4 dl lentils
1-2 stock cubes
1 l of water
1 tsp cumin powder
1 bay leaf
125 gr lentil pasta
1/2 cucumber
300 gr cherry tomatoes
Process
- In a large pot heat up some coconut oil then add finely chopped onion, garlic and chili. Sauté until soft and translucent.
- Add the tomato pure and stir for a minute or two. Then add the rest of the ingredients, bring up to a boil, then reduce the heat to medium and let cook partially covered for 20min. Add pasta a few minutes (cooking time for lentil pasta is usually 4-5min) before lentils are cooked through.
- Cut cucumber and tomatoes into halves/quarters.
- Serve warm!
