Red lentils with pasta

When I don’t have a lot of time this lentil and pasta dish is usually what I like to make. It doesn’t need a lot of preparation and it is done in under 30min. I like it just as is but it also goes well with a simple salad, pan fried meat or some yogurt!

  • 1 tbsp coconut oil

  • 1 yellow onion

  • 2-3 garlic cloves

  • 1 chili pepper or some ground chili

  • 4 tbsp tomato pure

  • 4 dl lentils

  • 1-2 stock cubes

  • 1 l of water

  • 1 tsp cumin powder

  • 1 bay leaf

  • 125 gr lentil pasta

  • 1/2 cucumber

  • 300 gr cherry tomatoes


  • In a large pot heat up some coconut oil then add finely chopped onion, garlic and chili. Sauté until soft and translucent.
  • Add the tomato pure and stir for a minute or two. Then add the rest of the ingredients, bring up to a boil, then reduce the heat to medium and let cook partially covered for 20min. Add pasta a few minutes (cooking time for lentil pasta is usually 4-5min) before lentils are cooked through.
  • Cut cucumber and tomatoes into halves/quarters.
  • Serve warm!
