These are three of my go-to sandwiches for the summer.

The one with tuna is my interpretation of a delicious sandwich I had in London a couple of years ago.

The one with hummus is a result of my laziness 😀 I love my Mediterranean meze which includes hummus, falafel, grilled peppers, home made flat bread.. However, I am not always in the mood for standing in kitchen for hours so…This is what I make on those days.

The one with grilled aubergine and pesto… mozzarella, mortadella, basil, tomatoes, balsamic… Do I need to say more?! 😀

Ingredients

  • Tuna sandwich
  • 1/2 cucumber

  • 100 gr rocket

  • 1 lemon

  • 1 can of tuna

  • 2 tbsp mayo

  • 2 avocados

  • Grilled aubergine and pesto sandwich
  • 1 aubergine

  • Balsamic vinegar

  • 3 cloves of garlic

  • 2 mozzarella cheese

  • Salt

  • 1 big bunch of basil

  • 50 gr Parmesan cheese

  • 1 tbsp pine nuts

  • 4 slices of mortadella

  • 8-10 cherry tomatoes

  • Olive oil

  • Grilled paprika and hummus sandwich
  • 2 slices of bread

  • 1 can of chickpeas

  • 1/2 cucumber

  • 3 cloves of garlic

  • 1,5 tbsp tahini

  • 1 grilled paprika

  • 1 lemon

  • Pinch of salt

  • 2 tbsp olive oil

  • 100 gr rocket

  • Alfa alfa, two handfuls

Process

  • Tuna sandwich
  • In a bowl, combine tuna and mayo.
  • Cut cucumber in to thin slices that are as long as the slice of bread.
  • On a slice of bread spread half of the mixture, top with cucumber and rocket. Cover with another peace of bread.
  • Grilled aubergine and pesto sandwich
  • For the pesto, add in a blender basil, garlic, grated Parmesan, pine nuts, olive oil. Mix until combines and as chunky as you like.
  • Cut aubergine in to slices. Salt and brush lightly with oil. Place on hot grill and grill on both sides until the slices are soft.
  • Cut mozzarella in to thick slices and tomatoes in to slices.
  • On a slice of bread spread a tablespoon of pesto, layer over a couple of peaces of grilled aubergine, mozzarella, tomatoes. Add a handful of basil and drizzle with balsamic vinegar. Cover with another peace of bred.
  • Grilled paprika and hummus sandwich
  • For the hummus add in a blender tahini, garlic cloves, lemon juice. Blend until smooth. Add paprika, chickpeas, salt, olive oil. Mix until smooth.
  • Cut cucumber in to thin slices that are as long as the slice of bread.
  • On a slice of bread, spread two tablespoons of hummus, top with cucumber slices, a handful of rocket and alfa alfa. Cover with another slice of bread.
