Out of the three, most often, I make the ice cream. I love ice cream and the combination of its sweetness and the tartness of the strawberries. So yummy! If you try these, let me know which one is your favorite!

Three easy summer desserts with strawberries

Ingredients

  • Puree (same for all three variations)
  • 500gr strawberries

  • Strawberry tiramisu
  • 1 tsp vanilla in dried form

  • 2,5 dl milk

  • 0,7 dl sugar white or brown

  • 3 egg yolks

  • 0,3 dl corn starch

  • 25 gr soft butter

  • 200 gr strawberries+4 for topping

  • 8 lady fingers

  • 16 tbsp strawberry puree

  • Strawberry lemonade/juice
  • 5 tbsp granulated sugar + water to cover it

  • 2 dl lemon juice

  • 4 tbsp strawberry puree

  • 8-10 dl cold water

  • Ice cubes enough to fill all the glasses

  • A few strawberries and lemon peel for decoration

  • Strawberry Ice Cream
  • Vanilla ice cream, 3 scoops per person

  • Strawberry puree

Process

  • Puree (same for all three variations)
  • Wash the strawberries and remove the top green part. Put in a blender and blend until smooth.
  • Strawberry tiramisu
  • In a pot add milk and vanilla. Bring to boil.
  • In the meantime, using an electric mixer, mix egg yolks, corn starch and sugar until fluffy and pale.
  • When the milk starts to boil remove it from the heat. Pour a few tablespoons of the milk over the egg mixture and using a hand metal whisk, whisk until combined then add the rest of the milk and whisk briefly.
  • Transfer the mixture back to the cooking pot and place on medium high heat. Continue whisking until it starts to thicken. Transfer the mixture into a clean bowl, add butter and mix until butter melts and the cream is smooth. Immediately place the bowl in the fridge and leave to cool completely. Whisk again before using.
  • Cut strawberries into chunks.
  • Break lady fingers into halves and cover with strawberry puree.
  • To serve, layer a tablespoon or two of the vanilla cream, two lady finger halves, a tablespoon of cut strawberries, another two lady finger halves, some more vanilla cream and a whole strawberry to top.
  • Strawberry lemonade/juice
  • Place sugar and water in a sauce pan then bring to boil. Continue boiling until all the sugar dissolves. Leave to cool slightly.
  • Peel one lemon and cut into strips. Slice a few strawberries.
  • In a cup mix, sugar water, lemon juice, water and strawberry puree.
  • Fill all the glasses with ice cubes, add sliced strawberries and lemon peel. Pour over the lemonade and enjoy while ice cold!
  • Strawberry Ice Cream
  • Cover the ice cream with the puree and enjoy!
