Now it finally feels like summer. Swedish summer is not as warm as I would like it but we have had a few sunny days and I am starting to think about wearing lighter clothes. Have been wearing winter jacket up to recently!

Why I love summer so much is partially because of the fruit. We get watermelon from Greece, which is the best and makes my every day when I can enjoy it! But also peaches and sometimes sweet cherries can be good (in general, fruit in Sweden doesn´t taste much).

I have been doing a lot of baking with fruit. You can check my older posts, there are quite a few baking with fruit recipes from last summer.

This year I am also into juicing. Freshly squeezed fruit juice or agua fresca, on its own or with ice cubes, is the best! Especially in the morning. It is so refreshing and easy to consume. Not gonna lie, watermelon is what I go for most times but here are a few more alternatives that can be just as exciting!

If you have good blender you don´t have too cook beets, just blend them raw.

Visually, I like apple and grapefruit the most. Juice has nice pale orange color with dots from apple peal – so cute!

You can also add seed to many of these if you want more texture. But just simple like this is perfect for me.

Ingredients

  • Watermelon and mint (7 dl drink)
  • 4 handful watermelon cubes

  • 4 leaves of mint

  • 1 lemon juice

  • Apple and grapefruit (7 dl drink)
  • 1 grapefruit, just skin without the skin

  • 1/2 royal gala apple

  • 4 dl coconut water

  • Strawberry and lemon (7 dl drink)
  • 1 handful strawberries

  • 1 lemon juice

  • 4 dl coconut water

  • Pineapple and orange (7 dl drink)
  • 1 orange, flesh without the skin

  • 1 handful pineapple

  • 4 dl coconut water

  • Blueberry and spinach (7 dl drink)
  • 2 handful blueberries

  • 1 handful spinach

  • 4 dl coconut water

  • Beetroot and raspberries (7 dl drink)
  • 2 cooked beets

  • 1 handful raspberries

  • 4 dl coconut water

Process

  • Place all the ingredients in a blender and blend until smooth. Serve with ice cubes.
