Sometimes I like to experiment in the kitchen. It doesn’t always end up with what I was hoping for, especially when it comes to baking and all the science of it. But this time I was ecstatic with the result – this incredibly moist and incredibly delicious healthy(!) banana bread!

I made naughtier versions in the past and I can tell you that you couldn’t be able to tell the difference. This banana bread is that good! It is not too sweet, with a bit of crunch from the walnuts and it stays moist days after.

For serving I like to add some fruit so this time I used bananas and strawberries, they are in season. I also added some peanut butter and some crushed walnuts for finishing touch.

Ingredients

  • 2,3 dl mashed very ripe bananas

  • 2 dl buckwheat flour

  • 2 dl almond flour

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • Pinch of salt

  • 1 dl chopped walnuts alt. raisins, chocolate chips

  • 2 eggs

  • 1 dl melted coconut oil

  • 0,8 dl honey

  • 0,6 dl milk (I used oat milk)

  • 1 tsp vanilla

Process

  • Preheat the oven to 180 °C. Line oven form with baking paper. Mash bananas.
  • In a medium bowl add buckwheat and almond flour, salt, cinnamon, baking soda and mix briefly.
  • In a big bowl add eggs, coconut oil, milk, honey, and vanilla then mix using electric mixer just until combined and a little frothy.
  • Add dry ingredients and to the wet ingredients. Mix with spatula just until combined.
  • Transfer mixture to a baking dish. Bake for around 1 hour or until toothpick inserted comes out clean.
  • Leave to cool slightly then cut thick slices and enjoy!
