This soup is like autumn in a bowl, colors and all! I have to admit that squash is not my favorite vegetable, especially if its very soft and mushy. So, I made sure not to overcook it or the other vegetables. That way all the vegetables kept their form and texture.

Minestrone with cavolo nero, beans and carrots
I don’t often cook with red meat but for this recipe bacon is essential. It transforms the whole dish and makes it taste that much better but if you want the soup to be vegetarian you can skip it. And the combination of kale, beans and carrots is just so good! For autumn this is a must! And for lazy days, when you still want something tasty, this is the one.
Red lentils with pasta
When I don’t have a lot of time this lentil and pasta dish is usually what I like to make. It doesn’t need a lot of preparation and it is done in under 30min. I like it just as is but it also goes well with a simple salad, pan fried meat or some yogurt!
